VG10 Steel Explained — Why It Matters for Your Kitchen

You've probably seen "VG10" on a product page and kept scrolling. Here's why you shouldn't.

VG10 is a high-carbon Japanese stainless steel originally developed for precision cutting tools. It's the steel that professional Japanese knife makers keep coming back to — and for good reason.

What makes VG10 different

Most kitchen knives are made from softer stainless steel. They're easy to manufacture and cheap to produce, but they dull quickly and need constant sharpening. VG10 sits in a different category. It contains a higher percentage of carbon, along with cobalt and vanadium, which gives it three things cheaper steel can't offer: hardness, edge retention, and corrosion resistance.

In practical terms, that means a VG10 blade can be sharpened to a finer angle and hold that edge through weeks of daily use. A softer steel blade doing the same work would need resharpening in days.

Hardness — and why it matters to you

Steel hardness is measured on the Rockwell scale (HRC). Most standard kitchen knives sit around 54-56 HRC. VG10 blades typically land between 60-62 HRC. That gap might sound small, but the difference in the kitchen is significant.

A harder blade takes a sharper edge. A sharper edge means cleaner cuts — your tomatoes slice instead of crush, your herbs stay green instead of bruising, and your proteins get clean portions instead of torn edges. The food looks better and cooks more evenly.

The tradeoff

Harder steel holds its edge longer, but it's also less forgiving under impact. A VG10 blade is not the right tool for chopping through bone or frozen food. That's what cleavers and butcher knives are built for. VG10 is built for precision — and it does that job better than almost anything else available.
